Sweet and sour Cashew chicken Stir Fry with zucchini noodles (the below recipe served 2 adults and 1 5yo child)
I totally made this up as I went along but it worked out so well! It’s delicious 🤤

For the marinade
1/2 Cup of Apple Cider Vinegar
1/4 Cup of puréed tomatoes
2 x tablespoon of Coconut Amino Sauce
1 tablespoon of sweet paprika
1 teaspoon of garlic powder
1/2 teaspoon of ground cumin
🌟 you could add some chilli 🌶 I avoided it due to my kids.

Mix all of the above together in a bowl and add your chopped up raw chicken. .
2 x chicken breasts
2 celery sticks chopped up
1/2 capsicum chopped up
1/4 Broccoli chopped
1/2 cup of cashew nuts
1 tablespoon of sesame seeds
2 x large Zucchini’s made into noodles

Method
👩‍🍳 Whilst your raw chicken sits in the marinade cook your vegetables in the fry pan with some coconut oil
👩‍🍳 once they are cooked to your liking place them to one side.
👨‍🍳 prepare your zucchini noodles ready to cook and put to one side
👩‍🍳 take the chicken out of the marinade and into the same pan (save the marinade leftover)
👩‍🍳 cook your chicken, add the vegetables back in, add your cashews and sesame seeds plus the rest of the marinade and mix together.
👩‍🍳 pour it all into a bowl and cover with foil.
👩‍🍳 add coconut oil to the same pan and toss your zucchini noodles around a few times then into your bowl. Top with the chicken and veg, sprinkle some sesame seeds on top and enjoy!
